The ingredients that we will need are:
100gr fresh goat cheese.
1 can of pickled canned mussels.
10gr trout roe.
5gr red lump roe.
5gr black lump roe.
10gr grains of pomegranate.
3 seedless grapes.
1gr Maldon salt.
1gr pepper.
5gr Verde Esmeralda extra virgin olive oil.
Elaboration:
Open the can of mussels and drain the juice preserving it.
Heat a frying pan and brown the cheese on both sides.
Remove the cheese and add the marinade, letting it rest for 10 minutes.
Mix the caviar with half the olive oil and reserve.
Cut the grapes into irregular wedges.
In a plate with some wing, arrange the fresh cheese and the marinade.
Add the pepper over the cheese and cover with the caviar.
Arrange the mussels and the pomegranate grains.
Add the grapes and Maldon salt and drizzle with the remaining extra virgin olive oil.
