With these healthy recipes we get to pamper our palate and our body in equal measure. Christmas recipes are the perfect excuse to surprise your family and get in a simple way some original recipes that will not go unnoticed.
Gourmet Christmas Recipes
The recipe we are going to make is a “Taco of crispy flame-grilled salmon, coconut yogurt, cranberries and pistachios”.
The ingredients we will need are:
- 400gr salmon
- 100gr of unsweetened Greek yogurt
- 20gr of coconut cream
- 40 grams of blueberries
- 20 grams of pistachios
- 1 lime
- 10gr lumpfish roe
- Emerald Green Extra Virgin Olive Oil
- Salt
- Sugar
- Mandon salt
- Pepper
To prepare this recipe we will start by removing the skin of the salmon and cutting it into 4 cubes. To give an original touch to the dish, we will cut the cubes in a checkerboard shape. Once cut, add a little salt and sugar to the salmon on all sides and let it rest for about 15 minutes so that it can release some of its water. Then, wash the salmon and dry it with kitchen paper.
Next, put the frying pan on the heat and add a splash of EVOO. Once it has heated up, put the salmon and brown it on the side where the skin was. When it has browned well, we change sides and brown the grated in a checkerboard pattern.
The next step is to remove it from the heat and let it rest for about 1 minute. With the help of a blowtorch, we will finish cooking it, thus obtaining a smoky flavor.
Next, mix the yogurt with the coconut cream. Add a few drops of lime juice to the mixture to give it a special touch and set aside. Next, we will cut the blueberries into quarters or halves and break the peeled pistachios, for later.
On the plate, we make a tear with the yogurt and place the salmon on it. Once the salmon is on the plate, add the Emerald Green Extra Virgin Olive Oil, Maldon salt, pepper and lime zest. Then add the previously chopped cranberries and pistachios. With the final touch, decorate with a lime wedge and ready to enjoy!
