Christmas is a time to embrace, to open gifts, to thank and above all to enjoy. Christmas lunches or dinners with your family are always accompanied by great protagonists, Christmas recipes.
In the Christmas days we always tend to overeat but we can always make healthy recipes that make us enjoy delicious flavors while healthy. Today we bring you a recipe that will conquer your palate by the incredible fusion of flavors.
Gourmet Christmas Recipes
The second recipe we are going to share is “Baby eels with pomegranate, garlic confit, broccoli, cherry and EVOO”.
The ingredients we will need for 4 dinners are:
- 400g of elvers
- 50g of colored cherry tomatoes
- 1 pomegranate
- 4 broccoli florets
- 2 cloves of garlic
- Salmon or lumpfish roe for decoration
- Maldon salt
- 50ml Extra Virgin Olive Oil
First, preheat the oven to 180º. When the temperature is ready, we introduce the garlic cloves and roast them until they are soft and caramelized. Once we take them out of the oven, we let them cool down to peel them. When they are peeled, we crush them with Extra Virgin Olive Oil until we obtain a homogeneous mixture.
Remove the pomegranate seeds and set them aside for later. Cut the florets into very small pieces and set them aside. Continue cutting the colored tomatoes in unequal portions.
Put a frying pan on the heat and add half of the garlic oil. Once it has heated up, add the elvers and sauté over high heat, making sure they brown a little. Once the elvers are browned, add the broccoli and sauté until it turns a deeper green.
Then we distribute everything on the plates forming a nest and add a few drops of garlic oil. It is the moment to rescue the tomatoes and place them in a disorderly way. Then, almost at the end, we decorate our plate with the pomegranate and the caviar.
Finally, we add the Emerald Green Extra Virgin Olive Oil and Maldon salt, and we have the second of our original recipes.
